Has anyone replaced their drivers seat? If so how do-able was it?
I really want to do this and have a seat to swap it with. The problem is that the metal base is so high it looks like it would not be possible to do as the newer seat is thicker than the old one.
Any advice very welcome please.

I would think that your seat bases are the same as in mine that being a ducato chassis and most seats are built to fix to the floor level so would be difficult to fit without a lot of modifications, the exception being type 25 VW's their seats are also on a built to fit on top of a high base. it might be easier if fitting a swivel base that is made to take different seat fixings.

It's up to your preferred driving position. A higher position is no bad thing so long as the top of the screen does not block too much forward vision. I raised mine about 2 inches fitting a swivel and got a better position.
Nothing is impossible though, if it's too high you may be able to get a lower seat base, or get you current one lowered/altered.
The hardest thing I found when fitting my new seat was finding a decent second hand seat. Actually fitting the seat itself is quite easy. Usually about 6 bolts, maybe on allen keys or torx. Have to slide the seat back and forwards and fiddle around to get to them, but not a huge job.
