we don't get many snakes hereabouts- can we scale these recipes down for earthworms ?

Yes, all earthworms are edible. Like snails they need to be fed on fresh leaves, pureed carrot, apple sauce or soaked cornmeal for a couple of days to purge the crap from their systems. Then twice boil and you are ready to go in your snake recipe.
