On a scale of 1 to 10 How difficult is it to wire in your own consumer unit in the van?

depends on how good you are following simple instructions not difficult but do double check every thing you do and do a schedule of the work you going to do and do a diagram and stick to it ,measure every thing with power on before you go away.and fit a RCD

I'd say 5 but it could be a lot lot more depending on how much one knows about 240v wiring.
For example mine came with no wiring instructions whatsover. The process of connecting wires into screw terminals is simple but it took me a while studying the unit to work out where the input went and where the outputs to the plugs go. Someone who has worked on domestic wiring would see in 5 or 10 seconds even without instructions as they are all generically a similar kind of layout.
