Lemon Parmesan and Herb Risotto
(Serves 2)
Olive oil - one to two tablespoons 1/2 Onion chopped finely 1 clove of garlic as above 175 ml or 130g of Risotto rice Glass of white wine 0.5 litre of hot vegetable stock (can use a stock cube or chicken or fish if preferred) Zest of 1 lemon plus juice of half a lemon Loads of grated parmesan to taste (or similar hard cheese - it wont be the same but experiment!) Generous kn-ob of butter Handful of chopped chives, parsely, thyme, coriander or whatever you can lay your hands on
I increased the lemon from original. Halve the quants if you are not keen on lemon.
1. Heat the oil in a large pan. Add onion and cook for 6 mins or until softened. Add garlic towards the end.
2. Add rice and simmer for a minute.
3. Add the wine and bubble till some has evaporated.
4. Put in half the stock and simmer, stirring for 10 mins or till absorbed.
5. Stir in the rest of the stock and cook for 8 mins or until rice is tender. The rice should be fluffy and slightly soupy.
6. Fork in over the heat the lemon zest and juice, 3 tablespoons of parmesan, the butter and the herbs.
Eat immediately sprinkled for garnish with fresh chopped herbs, more parmesan, or if liked some very finely chopped pine nuts/salami (optional)

Bacon:
Open packet and apply slices to frying pan Open all doors and windows wide Place smoke detector in sleeping bag Turn on gas and cook on full heat for 18-20 minutes turning occasionally if it's possible Scrape bacon from pan Break into smaller chunks (bacon, not pan) Insert into mouth Book tooth-repair appointment with dentist Retrieve smoke detector from sleeping bag
So far, this is my only camping recipe but I am proposing to tackle toast later this year, too.

Speaking of Lemons, Waitrose do jars of pickled lemons which are really good, they would go well finely diced with Vernon's Rissotto!

Yes that would would if you didn't have any fresh lemons to hand. Could also sprinkle on crispy bacon bits on from Karen's recipe provided they weren't too black!
