Ingredients: *Own Brand Vodka/Gin (750ml) *Root Ginger (A large handful, finely hand chopped or coarsely blended) *Tarragon leaves (A large handful, finely hand chopped or coarsely blended) *Sugar Syrup (Can buy or make by adding sugar to boiling water till solution is saturated and then allow to cool) Method: Decant vodka into 1000ml bottle. Add chopped ginger and tarragon. Leave to infuse for min 24-48 hours or longer. Invert and shake frequently. When infused (vodka should turn green/yellow), strain off vodka through sieves and then coffee filter paper till vodka is free from bits. Squeeze the ginger and Tarragon bits for any remaining vodka juice. Don't waste the ginger and Tarrgon bits - they can be added to a stir fry or soup etc . Add some sugar syrup to the vodka to taste. Probably 50-150 ml. Smaller amounts of sugar syrup will produce a Pernod like spirit, larger ones a liqueur like. Start with a small amount and see what taste you prefer. You can omit the sugar syrup but the strong taste of the herbs may be too much without some - try it without and see. Variations - Omit either the ginger or the tarragon, or try different herbs like basil and coriander.

I made it for Doodle's 40th birthday bash. It was actually pretty good, tasted very aniseedy like Pernod. The bottle disappeared very fast! I'll make some more for the Scotland trip Or maybe even Ribblehead if you are lucky
